Self-Care Tip: 3-Ingredient Healthy Meal

While we continue keeping ourselves safe as restrictions start to ease — getting vaccines, washing our hands, wearing our masks — we cannot forget that preventative care also means nourishing ourselves with healthy, colorful foods. The upside to making something healthy: even simple recipes can be satisfying and fun!

To get you started on your health kick (or to give you a little inspiration if you're getting bored with your recipes), we have created a delicious meal packed with protein and a little something sweet. Check it out!

Cheddar-Broccoli Egg Muffins

Ingredients

  • 4 eggs

  • 1 cup steamed broccoli (or frozen broccoli that’s been defrosted)

  • 1/2 cup sharp cheddar shredded

  • 1/2 tsp sea salt

  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 375 degrees. Coat a 6-hole silicone muffin tin with oil.

  2. In a bowl whisk the eggs, chopped broccoli, sea salt, and pepper together.

  3. Pour egg mixture into silicone muffin tins and divide the cheese on top evenly among them.

  4. Bake for 12-15 minutes, or until the eggs are set. Let cool and then remove from muffin tins.

Vegan Crispy Rice Treats

Ingredients

  • 2 cups rice crispy cereal

  • 1/2 cup peanut butter can sub for almond/cashew

  • 1/2 cup maple syrup can sub for agave nectar or brown rice syrup

Instructions

  1. Line an 8 x 8-inch baking tray with baking paper and set aside.

  2. In a large mixing bowl, add your crispy rice cereal and set aside.

  3. Stovetop or in the microwave, melt your nut butter with your syrup and then pour the mixture into the crispy rice cereal and mix well.

  4. Pour mixture into the lined baking tray and press firmly into place. Refrigerate for at least 30 minutes to firm up.
