Self-Care Tip: 3-Ingredient Cookies

Sometimes what you really need is a cookie! But maybe you don’t have a lot of time, or just feel like keeping things simple. Give these 3-ingredient cookies a try – they’ll have you smiling in no time.

Peanut Butter Cookies

Ingredients:

  • 1 cup peanut butter

  • 3/4 cup granulated sugar

  • 1 egg

Directions:

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper.

  2. Mix peanut butter, sugar, and egg together in a bowl using an electric mixer or spoon, until smooth and creamy.

  3. Roll mixture into small balls and arrange on a baking sheet; flatten each with the back of a fork, making a crisscross pattern.

  4. Bake in the preheated oven for 10 minutes. Cool cookies on the baking sheet for 2 minutes before moving to a cooling rack for a few more minutes.

Sugar Cookies

Ingredients:

  • 1 stick plus 2 tbsp. salted butter, softened

  • 1/3 cup granulated sugar

  • 1 cup all-purpose flour

  • Sprinkles or other toppings (optional)

Directions:

  1. Preheat oven to 325°. In a large bowl using a hand mixer, beat butter and sugar together until light and fluffy, then stir in flour.

  2. Form the cookies into 1-inch balls, placing them about 2 inches apart on a baking sheet. If using sprinkles or other toppings like nuts or jam, flatten cookies into a disc shape first, then apply topping.

  3. Bake for 15 to 17 minutes, or until the edges of the cookies are lightly golden.
